Southwestern Cornbread
 
Preheat oven to 425° F.
Sift together in a large bowl: 1 1/4 C. yellow cornmeal
  1 1/4 C. all-purpose flour
  4 tsp. baking powder
Mix in: 1 egg
  4 oz. chopped green chilis
  8 oz. creamed corn
  1/2 C. milk
  1/4 C. olive oil
  2 oz. shredded cheddar
 
Place in greased and floured 8" x 8" pan and garnish with:
  2 oz. shredded cheddar
Bake 25-35 minutes. Serves six.
