Chocolate cake
When you're in the mood for a rich chocolate cake, but don't feel like waiting an hour to mix and bake it, try this astonishingly quick recipe, which makes one or two servings of cake in five minutes... in a mug! The result is moist and heavy, a bit like a rum cake—in fact, you could do worse than substitute a tablespoon of rum for one of the tablespoons of milk in the recipe—but delicious! Add a couple tablespoons of chocolate chips or finely chopped nuts if you're in the mood.
Combine in a large, greased mug: 4 T. flour
  4 T. sugar
  2 T. unsweetened cocoa
Stir in: 1 egg
  3 T. milk
  3 T. vegetable oil
  1/4 tsp. vanilla
* If you only have sweetened cocoa on hand, cut the sugar to 2 tablespoons instead of 4.
Bake for 3 minutes* in your microwave oven. It'll rise well above the rim of the cup, but don't panic—it won't spill over! Allow to cool 1 minute before unmolding. Decorate with icing, if desired.
